There will apparently be something special on the menu for Top Chef: New York's penultimate episode.

Bravo has announced Top Chef: New York will feature a "shocking twist that changes the face of [the] game" during the series' penultimate episode on Wednesday, February 18 at 10PM ET/PT.

In addition, Top Chef: New York's penultimate episode -- which was filmed in New Orleans instead of the show's regular fifth-season location in Brooklyn -- will also feature famed chef and restaurateur Emeril Lagasse as a special guest judge, who will help narrow the field of finalists from four to three.

"In Louisiana, we have an amazing selection of local ingredients: andouille sausage, frog legs, turtle, catfish and rabbit. I was interested in seeing if the chefs would venture out and really try to explore our local flavors and culture," said Lagasse.

"The challenge for some was finding a balance between the bold spices we love and their own personal style. All I can say is that you'll definitely want to go back for seconds for some of their final dishes!"

Top Chef: New York's finale will then air the following week on Wednesday, February 25 at 10PM ET/PT.  The winner will receive a grand-prize package of $100,000 in seed money to help open a restaurant, a feature in Food & Wine magazine, and a showcase at the Annual Food & Wine Classic in Aspen.
