But when her date was about to begin, The Bachelor bachelorette Parisa Shifteh shared with the cameras, "Today was supposed to be Beverly's one-on-one date with Grant, but yesterday morning, she was very sick, and today, we found out she will not be coming back to the house."
Beverly's exit therefore resulted in Grant embarking on a mini-group date with three women.
Beverly shared the real reason why she left The Bachelor mansion prematurely during the Tuesday, February 11 episode of the "Bachelor Happy Hour" podcast co-hosted by Joe Amabile and Serena Pitt.
When Joe asked if she had the flu, Beverly quipped in reply, "I wish I had the flu."
Beverly went on to detail how serious her medical condition actually was.
"[During the large finance group date] I took a nap and I woke up and my stomach was hurting. I was like, 'Ehh, maybe I just need to go to the bathroom or the food didn't sit well,'" Beverly recalled.
"And then I started throwing up. I'm like, 'Okay, maybe I just need to get it out,' or whatever. So my stomach is continuing to hurt; I am in excruciating pain. I was continuing to throw up and it was a mess."
The 30-year-old insurance salesperson from Howard Beach, NY, said this went on for 12 hours before her scheduled one-on-one date.
"So I have anxiety -- I'm diagnosed and everything. And sometimes my panic attacks cause me to puke, but, like, I didn't feel anxious," Beverly explained.
"If anything, I was like, 'I'm living life! I'm getting a one-on-one, I'm in the house alone and I have all this [free] time.' So I knew something was not right. I was like, 'I know my body, I'm listening to my body, and something is not okay.'"

Beverly thought she could've possibly had food poisoning, but she noted how her whole stomach was hurting.
"It was not like one side was hurting. I didn't think it was anything serious. I was like, 'Okay, maybe I'm just having really bad stomach pain,'" Beverly said.
"And at this point, because I had gone so long throwing up, I was like, 'This is probably why my stomach is hurting even more, because I have nothing in my tummy.' So they ended up taking me to the hospital because I was not okay."

Once at the hospital, Beverly said doctors hooked her up to an IV and gave her morphine.
"The pain finally went away, but I was like, 'What is wrong with me?!'" Beverly recalled.
"So after three hours of being in the ER, the doctor finally came in and he was like, 'You have appendicitis and you're going to need emergency surgery.'"
Beverly said it took a while for her to process this bad news.

Beverly already had her gallbladder removed in 2018, so she couldn't believe her appendix was going to be removed as well.
"I'm losing organs left and right! I'm like, 'What is going on?!'" Beverly joked.
Beverly said her father wanted to put her on the next flight out of California so she could have the surgery at home but she couldn't because her appendix could "explode" during travel.
"It was not safe for me to fly, so I was really, really sad. Honestly, it took me, like, a month-and-a-half to recover emotionally. Physically, I was okay. But emotionally, I was not," Beverly shared.
"I was left with a 'what if?' Obviously we were building a connection, and he saw and felt exactly what I was seeing and feeling. And I know they didn't show a lot of our moments, but we did have a lot of cute little moments. They never showed us kissing, but we kissed!"
Beverly therefore reiterated how she was "really sad" and "really, really bummed out," especially since she had felt so "honored" to be asked on a one-on-one date early in The Bachelor process.
Beverly also didn't get the chance to say goodbye to Grant or tell him what happened.
"I hope he didn't think I left just because," Beverly noted.

When recalling the timeline of her surgery and recovery, Beverly said she got sick on a Tuesday, she underwent surgery on a Wednesday, and then her mom flew to California to pick her up on Thursday.
"I went home Friday. It was literally so quick!" Beverly said.
"I wanted to stay on [the show] but I think it was best for me to just go home and recover. Also, because as you know, they eventually start flying places. So it wasn't safe for me to fly as I'm recovering from a surgery."

"I was sad about leaving, but once I got home and settled in, honestly, the best decision was for me to come home and recover. It was a lot," Beverly shared.
But Beverly conceded that "everything happens for a reason" and so she has accepted her situation.
"I'm like, 'What are the odds my appendix will act up on the show and then days before I get a one-on-one?!'" Beverly lamented.
"I was like, 'Grant is not your person, okay?!'"
Serena agreed the universe is trying to "redirect" Beverly, and she laughed.
"But I'm sad because America didn't really get to see me. I am silly and funny and goofy. I obviously have a serious side as well, but I was looking forward to the one-on-one because... I was going to open up to Grant about [my anxiety]," Beverly revealed.
"It's a really huge part of my life, and I wanted to see what his reaction [would be] and if it's something he [would be] able to handle. So I was excited to finally talk and open up more... It's really sad that we didn't get that moment."
But Beverly is optimistic ABC may ask her to appear on Bachelor in Paradise's upcoming tenth season.
Beverly gushed about how she would "1,000 percent" join the Paradise cast if given the opportunity.
"If I had made it any further, I probably wouldn't consider Paradise. But because I didn't make it that far, yes!" Beverly confirmed.
"Because I do want to get married. I'm 30-years-old and I'm ready for kids and family. I've always been a relationship girl, and so that was my intention going on the show."

"Yeah, I would definitely be interested... I'd be excited if I get the chance to go on it," Beverly concluded, adding how she's a big fan of the spinoff and has seen success stories come from it.
