Hell's Kitchen's third-season premiere did well in the ratings on the Monday night, delivering the Fox reality show's highest-ever debut numbers among total viewers and several other key demographics.

Hell's Kitchen 3's debut -- broadcast in the show's regular Mondays at 9PM ET/PT time period -- averaged eight million viewers and a 3.6/10 rating/share in the Adults 18-49 demographic, according to Nielsen's preliminary fast national ratings figures.

Overall, Hell's Kitchen finished second in the hour among total viewers (behind repeat broadcasts of CBS' Two and a Half Men and How I Met Your Mother) but first in the time period among most key demographics, including Adults 18-49, Adults 18-34 (3.2/10 rating/share) and Teens (2.4/9 rating/share).

In addition to delivering the show's best-ever premiere numbers among total viewers, Hell's Kitchen's third-season debut -- which also aired against the second episode of ABC's new female-targeted Ex-Wives Club reality show and NBC's broadcast of Game 4 of the 2007 NHL Stanley Cup Finals -- also matched last summer's Adults 18-49 premiere numbers and delivered the show's best-ever premiere numbers among Women 18-49 (a 4.4/12 rating/share) and Women 25-54 (a 4.5/11 rating/share), and Teens.
